How to update candidate status when employee record canceled to fix hire date

Pending worker auto-converted to employee on 1/21, with hire date 1/20. Turns out the person never started because the hire date was moved to 1/27.
When I canceled the employee work relationship and Reversed the termination on the pending worker, I was able to correct the hire date. BUT the candidate status moved to HR-Withdrawn by Candidate.
How do we correct or avoid the status change, since the person will be Hired, just at a later date.
