Where can I find extensive workflow administration documentation ?

Hi,

As the title says, where can i find workflow administration documentation that would explain in details how workflow works, and for example what does each value of each one of these fields represent (what is the preapproval stage, what does preapproval consensus imply…) ?

I found the documentation for example but they dont answer to my questions :
