How to audit configuration changes made via Setup and Maintenance

We need to enable the audit function in Fusion to capture configuration activities made by system administrators. It is a part of SoD audit requirement.

Our management has requested to see audit records for all configuration changes made via Setup and Maintenance > Offerings, as well as Setup and Maintenance > Financials, Procurement, Workforce Development, Workforce Deployment.

For example, during our recent implementation of the Redwood Purchasing application, I opted in to multiple features via Offerings and enabled several administrator profile options as well. How can we capture these configuration activities in the audit report?
