Is there a way to track documents submitted by employees?

We are looking for a way to track training plans and OJT forms in the LC.

It would be for those things that the student would read and sign that they read the document or it could be things that they do for OJT, like observe a meeting or go on a joint call.

I wish that documents that are uploaded into Assignments would still be accessible after you mark the Assignment complete.

Has anyone else found a way to do this?
