Customizing Review Workflows

I have made some changes to my review workflows and it seems I just can't get them right now.  There always seems to be a step mssing, something not viewable/editable for the employee or manger, etc.

Here is what I am trying to accomplish:

I have 2 workflows, one for employees with computer access (Standard Workflow) and one for those without computer access (Manufacturing Workflow).

I am using annual review cycles.

Standard: Managers should see  New, In Progress, Submit for Approval, if approved - Employee Sit Down, Submit for eSignature, Final pdf

Standard: Employee should see  Self- Appraisal then nothing until eSignature then Final pdf viewable on the EWS
