Migration of Config/Setup data

Looking for suggestions on best way to copy config from TST -> PRDContent
We have a requirement to copy configuration from our test environment to our production pod. I'm interested in anyone's opinions on the best way to do this.
One complication is that we will be preparing for multiple countries in TST at any one time, and only wish to move to PRD the configuration pertaining to particular countries, not all config.
We really don't want to be doing this manually, so any guidance is welcome, thank you.
