How can we know what attributes are available in ItemPVO

Summary

OM Extensions allow us to query the content of the ItemPVO using Groovy...

... however, I don't have a complete list of what attributes are available in the ItemPVO (Public View Object).  Is this documented somewhere?  At the moment, I'm just guessing and sometimes I can't get the guess correct.  There must be a better way to work with these PVOs.  Do you have advice?

PS. Attributes available on the Order are documented, but I can't find those on external objects such as Items.
