Learning Plan Due Date question

I am trying to set up a learning plan for new hires.   I would like to put different courses in the learning plan with a variety of due dates.  For example...

Sexual Harassment - Taken within the first two days of hire 

Cyber Security - Taken within the first two weeks of being hired

Where I am am running into an issue is that it appears that the system wants an actual due date.  I am trying to avoid the administrative task of constantly coming back in and adding the due date.  Is there a way to set up a date criteria? Or a work around?
