Approval configuration for expiration and notification

Hi experts,
We have this requirement - to bypass one approver if the approver doesn't make any action of the transaction in 7 days ( route to next approver if there is next approver; and take the transaction approved if there's no next approver). And both the initial requester and the bypassed approver need to receive notification of this bypass. Is it achievable?
I see we can do Expiration Settings in BPM in tab Deadlines in the tasks. Is Escalate the right option to realize the requirement?
And for Notification part, is it to add Task Status 'Expire' to both Owner and Initiator?
