Can we set fields to default to null when opening?

Hi all,

Is it possible to set the why and when fields to null when a user opens them?

There would be more change of data accuracy as some line managers don't know these can be changed (very grey) and because there is a value, whilst mandatory there is no warning. 

If we could null the value we can then it will force the line manager to select a value (hopefully the correct one)
