Learning Plan Due Date Adjustment for Some Users

I've got a customer with a few hundred users that is being acquired and they would like to "reset" their training. They're nearly 100% past due so there's no concern on past records, this represents a small percentage of the userbase using these learning plans, so I need to change theirs while changing nobody else's.
Few key points:
These are Recurring plans with a 30 day due date and annual renewal.
All users are mapped to them via dynamic groups. I don't believe unmapping/remapping them would effect this change but I'm not sure.
