No Option for Style Item when creating new items

We are using OPH 19D more or less as a standalone. We have had items created by a consultant, but two things appear to be a problem:

1. All item attributes have been created at the root level. We would like to have an item class containing the item attributes to give us more flexibility.

2. The items have been defined as SKU items rather than having style items with related sku items. When we create a new item we expected to have the option of creating a style item, but that option does not seem to be available anywhere.
