How to create an ESS job to transfer default users

Hi guys,

We need to implement a process that will transfer all default users (Default Buyer, Default Requester, etc.) and also all purchasing and other approval needed documents assigned to them to another users if these default users are no longer part of the company's staff. 

In order to do that, we're trying to create an ESS job or similar. We've been searching on how to do that, but as we didn't found anything on this, we'd like to know if it's possible and how to do this.
