How to restrict the Document Type list of values

Hello experts,

is there a way to restrict the Document Type list of values? If I access the Document Type page and I expand the drop down menu I can see all documents configured in the system.

However, I have tried to create a custom data role having a Document Type security profile including document I want to be displayed when opening the drop down menu, but I still continue to see all values.

Are there other configurations to make in order to make visible only desired documents?
