Customized DOO created and need to remove automatic reservation step and add there Manual Reservation after Order Booking step

We have a requirement to disable automatic system reservations for the Sales Orders and have a step in the orchestration process right after order booking that allows Inventory users do a manual reservation. Please suggest the steps needed in this orchestration process customization to achieve this feature. Any documents, notes, information regarding this is appreciated.
