PTO email notifications have incorrect dates

In the body of the email notification the dates are incorrect

The email body date doesn’t match the actual PTO request date. The subject line has the correct dates.The dates are correct in Oracle. In the attached example, the correct date is November 25th. As highlighted, it's a day off in the body of the email. This only started happening when we switched to NUX. And it doesn't happen consistently. It's very random from the research I have done and I cannot replicate this in a test environment. Any ideas?
