Value change in old quote should be reflected in new quote

Please tell on how to achieve the below scenario.

A quote is sent for sequential approval process. Each approver will change few parameter in the quotation which will change the total transaction amount of the quote. Once the quote is approved, in the header the agent has to see the list of parameters changed and what was the total transaction amount for each change. The list of approver may change dynamically based on the condition, so we cannot create static fields to store the value. 

Also when multiple version is created, he should be able to see the list of parameter changed and its corresponding amount.
