Generate an assessment for a completed offering at a later date

Hello everyone,

I have a requriement to have timed assessments after a course completion. Below is an example of the requirement:

A learner will need to complete an assessment during the offering and should complete another assessment for that same offering in 3 months after the offering compeltion.

If anyone had a similar requirement of generating an assessment for a completed course at a later date, could you provide information on how you where able to accomplish this?
