Issue with Assessing GST and PST on Memo Lines

We have only been charging GST on Sales to Saskatchewan, British Columbia and Manitoba. We need to start charging PST on equipment that we are selling to our Canadian franchises. The other sales will still only have GST assessed. I thought perhaps we could do this via the Tax Product Category, but I don't see where I can set these up. Currently when we flag a line as Non-Taxable we do this via the Tax Product Category. Would anyone have any suggestions?
