Can we add values in Ethnicity/Race for US employees?

Summary:

With Not Disclosed and Two or More options removed from the Ethnicity field, we are having issues with integrations and would like to know if there have been any way to solution or a workaround.

Content (required):

We are not using the EEO report or ORC, but wanted to keep the Not Disclosed and Two or More Races information for the US. Our external recruiting system has these options listed and the inconsistencies are causing issues with the integration. We have tried managing the lookup with no success. Has anyone found a solution or a workaround that can allow us to have these values for the Ethnicity field?
