Managing Restaurant POS transaction and Reporting using financial subledger and Ledger

Summary:

Leading Restaurant Industry customer in NA is going to sunset their legacy application hence looking for oracle financial cloud and supply chain cloud as replacement solutions. Currently daily POS transactions are getting feed from POS (Point Of Sales System) system to custom made Subledger application treating it as holding Area for massaging / auditing and fixing failed transactions before interfacing and reporting it to Legacy General Ledger application. Now customer in future world is insisting to have similar Subledger application to hold / audit / correct these transaction before interfacing it weekly to Oracle Cloud General Ledger for final reporting.

As of now there is no standard option to handle this situation in Cloud financial so could you pls suggest better approach?
