How do I set up a folder structure under one Course

Summary:

I have always only set up a Course with One Offering and many Activities. However I need to now set up a Course with about 100+ Activities (or 100+ pieces of Content such as videos, pdf, mp4).

Ideally the Course would have 6 "folders" with many activities under each "folder". But I am unsure what is the best way to set this up in Learning?

We want the course available to everyone in the organisation.

Employees should have access to all the information at any time. They dont need to learn in any particular sequence, self paced is fine.

We want to keep it simple, very much like a library that employees can refer to the files at any time. Keen to hear thoughts/advice/what has worked in the past for you?
