Is it possible to customize the textual ESS Disability forms that display for certain legislations?

Summary: We are looking at capturing Disability within our organisation. Some countries in the drop-down such as the UK, US & Ireland display additional text which looks like an official form and refers to Equality or Disability Acts. My question is whether this text or form can be customised or amended? In particular the UK text lists 'Psychotic' as a disability when it should be 'Psychosis' and it also says to 'contact our Health and Safety Team' which we do not have in our organisation. Any help or links to documentation on how to customize this form would be much appreciated.
