Convert Pending Worker to Employee - Restrict Fields

Hi - while converting a Pending Worker to an Employee, we would like to prevent HR from making changes to the salary and assignment fields since these values would have been approved at the job offer level. Examples would be: Position, Job, Department, Salary Basis, Annual Salary, etc.

Is Page Composer the only way to make these fields read-only or are there alternatives ?
