Restricting Values in LOV / Prefilling Value when only one value is selectable

Summary:

Hello Team,

I'm looking for some advice for HCM, predominantly - there are values included in a LOV but I want to restrict the view of the LOV to reduce the number of options a user can select without making the other values inactive.

For example, in our Employment Details section for Adding a Contingent Worker - for the person type - we have a prefilled list of values. I want to add a customisation that reduces the list down to 3 values WITHOUT making the other values inactive. Whether that is possible to restrict it on role.

In addition to it - is it possible to predefine a value into the field on the page loading. On the When and Why page, the legal employer value defaults as 'Select a value' where the user can only select on value - can we prefill that in to the only value?
