How to provide all employee data for a Subject Access Request?

We have received a Subject Access Request and, under UK legislation, are obliged to provide the requestor with all data that we hold about them. Is there any relatively easy way to export all data held for a single employee? At the moment our options seem to be either taking lots of screenshots from the UI, or running lots of SQL queries to pull out the data in all tables for that employee. Both will be time consuming. Does anyone have suggestions for a better approach?
