BPM Escalations Exclude Feature

BPM escalations exclude persons or job roles and exclude Weekends and Holidays.

Hello ,
We have two questions on BPM escalations feature:
1- We need to exclude certain job roles or persons from the escalation process (for example: CEO person) .
The questions are:
- Could this we exclude job roles throught BPM ? Could we use Highest Approval Title ?
2- We need to exclude weekends which is dependent on Absence of the country legislation. (For example: The weekend of Egypt is Fri and Sat, while weekend of UAE is Sat and Sun).
What is currently available is a fixed option "Exclude Saturday and Sunday".
