How to customize BICC to control data that can be accessed by BI team

Hi All,
We plan to use BICC for pulling data out of HCM but our HR team is concerned on the data access front. We feel like the BI team will have access to sensitive data like social, and birth date. We want to know how to control access to BICC so that only required columns are pulled.
Content (required):
Currently, it gives full access to the entire extract in BICC. BICC extract has 600 columns which makes not easy to monitor what data is getting sent across. Please let me know if there is easy access to restricted data.
