How to Mass Update (Correct) Learning Assignment Expiration Date

Summary:

We have courses expected to be taken each year on a monthly cadence that are being auto completed in year 2023 when assigned because the expiration date on the completed 2022 course record is wrong. We do not have Activity Sequencing enabled.

Looking recommendations on the cleanest way to reassign these courses to ensure the training is completed by the employee for the current calendar year. Is there a way to mass update the Expiration Date on the previously completed Learning Assignment record?
