Connecting Two Salesforce to One CPQ, but using multiple Commerce Processes

Summary:

We are in the process of moving from an old instance of Salesforce to a new one, and as part of that we will need to connect both the legacy SF and the new SF to one CPQ instance, but want to use separate commerce processes for each (i.e. the legacy CPQ process -> legacy SF, new CPQ process -> new SF).

So far I have found information that says we can do 1 CPQ : many SF, including multiple CPQ commerce processes to a single SF Instance. However, I want to ensure that I can in fact connect two separate commerce processes to two separate Salesforce instances, and am looking for information on how to configure that setup within the CPQ site. If there is a setup guide that would be great.
