Restrict for documents records

Hello everyone,
we are experiencing problems with the restrictions applicable to documents in terms of uploading, modifying and deleting the document in the role.
In particular we would need to limit a document exclusively for the employee.
As only the employee has the possibility to modify, add or delete this document.
Therefore the employee role is associated with all employees within the system even those who are managers or responsibilities.
How could you handle this?
