how to hide extra religion and ethnicity fields in demographic details

Summary: The person demographic page has new (and redundant) fields for Religion and ethnicity which are free text fields. I am trying to turn them off but I think there is a visualization rule that is overriding my business rule. We do not want employees inputting a free-text ethnicity into a separate field which we do not report from. We do not track religion and do not want to give the impression we need that info.

How may we disable the highlighted fields in VBS?
