OM Price list by Item category (instead of item codes)

We are exploring the feasibility of setting prices based on item categories without requiring item codes to be created beforehand.

Our business operates in ship chandlery, where the number and variety of items are vast, making it cumbersome to add each new item to the price list manually. Instead, we want to establish pricing by category.

Is it possible to maintain a price list based on categories?
