Change edit functionality to review in the approver workflow

Hello,

We are trying to change the edit functionality in the approval workflow to be view only. If the edit button is completely removed, then there is no way to view the document records that are attached. This is especially crucial for new hire workflows. Is there any advice on how to have a view only mode so that the approver can still see all parts of the transaction, including document attached to document records?
