LoV not Pulling Through to Create Assignment under Manage Resource Schedules

Under Manage Resource Schedules > Search for resource > Edit Resource Schedules > Highlight Resource > Create Assignment, the LoV are not correctly displaying. We have disabled seeded values which are still showing and added a custom value which is not showing. When we create a new assignment via Manage Project Resource Assignments the values display as expected.

Seeded values from Oracle and have disabled via the following steps - we have also added a new custom value:

However, the disabled fields are still visible in the UI and the custom field isn't (this is under Edit Resource Schedules)

Please can you advise why this is happening?
