Concatenate the item text in a Single Select

Is there a way to show the text of multiple fields in a Single Select when you select that row?

In many of the examples, the search results will show "First Name | Last Name" but then when you actually select a row, you only see the First Name.

Is there a way to show "${First Name} ${Last Name}"?

For my use case, it is an SDP-driven row.
