Enable Completed Learner to Access New Activities in Offering

Summary:

We have a scenario where there was a need to add a new activity to an offering post launch. However, a few learners had already completed the offering, and despite reverting the status of one completed activity in order to change the assignment status, the new activity does not show for the learner even though the total number of activities changes. What is the easiest way I can get the learner access to the new activity added?
