OOTB field : Last Touch Date field does not get updated when activity/record is updated

Hi Everyone,

We have an OOTB field named Last Touch Date in rollups of each object like Accounts, Opportunities etc. This field does not get updated based on any activity changes or record updates. We would like to know why this field is not getting updated.
