How to override itinerary on order release

Summary:

I have multiple order releases that have 20+ different itineraries that all have a ground schedule leg for last mile. I want to use LNM and see what the impact of one leg with multistop would be. How do I setup my scenario to change either the itinerary or the itinerary leg being used in the bulk plan? Do I also need to change the delivery dates on the order releases?
