OIC HCM Cloud payroll integration architecture

Hi all,
We are building an OIC integration from HCM Cloud to 3rd party system. The downstream payroll system is expecting 11 txt files containing over 150 fields (Core HR data - personal info, employment data, contracts, compensation etc).
We are at the design phase now and for the data extraction we are considering both HCM Extracts and BIP → for both we have pros and cons.
We've seen the general recommendation from Oracle is to work with HCM Extracts which is able to handle the delta (Changes only) and high volumes. But at first glance it would look like working with the xml generated on UCM from HCM Extracts (especially with so many fields) can be laborious in OIC - to parse it, map it and package it. Also, can we expect an easy way to extract that kind of aggregated data with HCM Extracts? Is it possible that not all fields are exposed in HCM Extracts?
