Approver Unable to View Employee Contact Changes in Approval Notification

When an employee updates their contact information, the change triggers an approval workflow. However, the approver is unable to see the actual changes in the notification. Both the old and new contact details are masked and displayed as "Secured".

Interestingly, in a recent clone instance, the same approver can view the detailed (unmasked) values in the notification.

I have already verified the Profile Options in both instances, and they are identical.

Could you please help investigate why the masking behavior is different?
