How do i freeze/pause the 26.06 update going in production?

Our AI deployments has to go through an approval process from test environment before it goes to production, once the approval is ready then we would want to deploy this update. As soon as the update is deployed AI is automatically turned on by the system which would be impactful to our users without knowledge. We want time test the item for functionality purposes as well along with the approval process before deploying to production then once we get the goahead we can update.
