How to Update Commerce Document Views in New Slow UI

When creating a new commerce attribute, it is normally not expected to be Read/Write for all profiles in all steps. How do I update the access to all participan profiles at once?

I have noticed that, in tune with the rest of the new experience, updating a single participant profile's access to the document views when you're in the Document Views page was made slower, now requiring 3 times as many clicks (1 to select the profile, 1 to open the dropdown menu, and 1 to select the desired access option) assuming you do not misclick. Furthermore, an option to select all or to update all participant profiles is nowhere to be found.
