Redwood - Multiple Day Events - Marking Completion

Need some advice around using events that have more than one activity, and how it works with staff who don't attend.

We are currently using Events and if there is a session that is more than one day, we are adding them as activities. We have an issue where a member of staff has attended the one day but not another. We can update the system accordingly (Day One Complete and Day Two Incomplete) and we then book them onto another event. However, we need to mark the one activity as complete and want to use the original date as completion:
