How to delete emergency contact's **** and date of birth?

We are required to delete emergency contact's **** and date of birth for a high volume of users. Whilst researching, we have found that 'you cannot directly "delete" or clear just the date of birth field while keeping the emergency contact record active'. Is this correct? How do we action this change whilst allowing the emergency contact record to remain?
