Can RAC survive with 1 instance and 1 node?

 Dear experts,
We would like to remove a node from a 3-nodes RAC, which is fully documented. But before we take action in production, we would like to test the whole procedure in our development environment, which is only a 2-nodes RAC. My question is, is it possible to leave it with 1 instance and 1 node? Please kindly give me a hand...
