RMAN restore to another server

 In my position I am required to take current backups from our production servers and restore them on to our test and development servers to refresh the data frequently.

I struggle to get the production RMAN backups restored to the test servers.  Can i not perform a simple RMAN restore over the existing test database without problems?  What is the proper procedure for restore a RMAN backup to another server over an existing database. 

I have just attempted this process and now get the following message.

Ora-01190: Control file or data file 1 is from before the last RESETLOGS
