Simple way to do a full database backup

I had a consultant set up a backup scheme for me with a catalog and schedules and all the normal stuff. Unfortunately the server that he set up the catalog on and the database where he stores all the related stuff is down with hardware problems.

I went to EM to do and online backup of the other two databases, but the results don't look right: (1) there is not the same number of files in the backupset as the nightly backups have, not or the sizes of the files there anywhere near as big as the nightly backups; (2) on the other on the EM statusjust says suspended and I cannot find where it will tell me why it is suspended.
