Merge fields in Eblasts

Hey you CRM experts out there!  I'm trying to save my Customer Service people a lot of pain by getting the personalized letters I need into eblast form.  I need to include a few merge fields from various areas in On Demand and am having trouble with two out of the three!  I got the contact name in there fine, but am having difficulty with the animal name (this shows up under the Deal in our system) and the vet name (under the Account but that has to be associated with the correct owner and animal). 

I'm hoping the Custom Objects will work, but I can't figure out how to link them to the field I want them to pull from.  Any ideas?
