Schedule Ship Date on Order Import and History/Log Tables for Order Management

I'm new to Oracle EBS and currently I'm doing production support for the Order Management module. I just want to verify some things and I hope to get enlightenment here.
We currently have a case wherein one of the orders that were imported registers a different SCHEDULE_SHIP_DATE from what was in the import file (import file date is 3/30, oracle date is 4/7). Would it be possible for this to change while being imported or does Oracle just captures this data from the import file and store it in the database as is, without calculation?
Also, is there a history table associated with OE_ORDER_HEADERS_ALL and/or OE_ORDER_LINES_ALL where I may be able to track and see movements or updates on the records?
